The Coffee Factory - "This washed lot comes from Norman Mukuru and The Coffee Yard based in Mbale, Eastern Uganda. The Coffee Yard sources from 9 lead farms and their neighbouring smallholders. Norman Mukuru works with the farmers to provide training on how to buy the right cherries and process their crops in a uniform way. These farmers harvest, pulp, and ferment their cherries in barrels and skin dry before transporting them to the Mbale drying yard owned by TCY. Here the cherries are dried to a moisture content of under 12% before being hand sorted to filter out unripe cherries and imperfections."
